Egg Muffins

Ingredients

  • 8 Eggs beaten
  • 4 oz Canadian bacon diced
  • 1 frozen chopped spinach defrosted, squeezed dry
  • 1 1/2 cups Cheddar cheese
  • 1/4 Bell pepper any color
  • 1/2 cup Cottage cheese
  • 1/8 teaspoon Cayenne pepper or more to taste
  • salt
  • pepper

Instructions

  1. Preheat oven to 350 degrees .
  2. Cook bacon in non stick pan until slightly browned.
  3. Divide equally into 12 large non-stick muffin tins that have been sprayed with a non-stick spray (for insurance).
  4. Combine spinach, cheddar, sweet pepper and cottage cheese. Divide into the 12 tins.
  5. Whisk together eggs, salt & pepper and cayenne. Divide once again into the muffin tin.
  6. Bake for 30 minutes.
  7. Once cooked & cooled a little, remove from tins, place on a cookie sheet and place in freezer.
  8. When frozen they can then be placed in a freezer bag.
  9. Pop one or two in the microwave for 2 minutes in the morning and voila! Instant breakfast.
