Breakfast Bowl
Ingredients
- 2 sweet potatoes peeled and diced
- 1 yellow onion diced
- 1 cup sweet bell peppers (any color) diced
- 6 oz. Soy chorizo
- 1 tsp. dried sage
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red chili flake (optional)
- 1 medium avocado sliced
- 3 TBL vegetable oil
Instructions
- Heat a large skillet on medium-high heat. Add 2TBL of the oil and soyrizo. Cook for a couple of minutes, breaking it up as it cooks.
- Add sweet potatoes. Sauté until tender (about 7 min.). Add onion, bell pepper, sage, red chili flake, and salt and pepper. Cook another 5 min or until onion is just starting to brown.
- To serve, spoon sweet potato mixture into bowls top with 1/4 avocado and your favorite hot sauce, if desired. Devour!
