Blender Waffles or Pancakes

Ingredients

  • 4 cups flour
  • 4 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 4 eggs
  • 4 cups buttermilk
  • 1/2 cup margarine, melted

Instructions

  1. Put all the ingredients in the blender and blend on a medium setting for 30 seconds.
  2. Scrape sides of blender if necessary and blend another 30 seconds.
  3. When batter is smooth, pour by 1/4 cup measure onto hot griddle or waffle iron.
  4. Can be stored in refrigerator for 4-5 days.
  5. Yogurt can be used with or instead of the buttermilk.
