Glorious Morning Muffins

Ingredients

  • 2 1/2 cups All purpose flour
  • 1 1/4 cups Granulated sugar
  • 1 tablespoon Cinnamon ground
  • 2 teaspoons Baking soda
  • 1 teaspoon Salt
  • 3 each Eggs large
  • 3/4 cup Applesauce canned
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 2 cups Carrot shredded
  • 1 each Apple medium, grated without peel
  • 8 oz Pineapple canned crushed (drained)
  • 1/2 cup Coconut coconut meat, dried, sweetened, shredded flaked
  • 1/2 cup Raisins seedless
  • 1/2 cup Walnuts chopped

Instructions

  1. In a large bowl combine first 5 ingredients.
  2. In another bowl combine the eggs, applesauce, oil and vanilla. Stir into dry ingredients just until moist (batter will be thick).
  3. Stir in carrots, apple, pineapple, coconut, raisins and nuts.
  4. Fill greased or paper lined muffin cups 2/3 full.
  5. Bake at 350 for 20 - 25 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes before removing from pans to wire racks.
