Glorious Morning Muffins
Ingredients
- 2 1/2 cups All purpose flour
- 1 1/4 cups Granulated sugar
- 1 tablespoon Cinnamon ground
- 2 teaspoons Baking soda
- 1 teaspoon Salt
- 3 each Eggs large
- 3/4 cup Applesauce canned
- 1/2 cup Vegetable oil
- 1 teaspoon Vanilla extract
- 2 cups Carrot shredded
- 1 each Apple medium, grated without peel
- 8 oz Pineapple canned crushed (drained)
- 1/2 cup Coconut coconut meat, dried, sweetened, shredded flaked
- 1/2 cup Raisins seedless
- 1/2 cup Walnuts chopped
Instructions
- In a large bowl combine first 5 ingredients.
- In another bowl combine the eggs, applesauce, oil and vanilla. Stir into dry ingredients just until moist (batter will be thick).
- Stir in carrots, apple, pineapple, coconut, raisins and nuts.
- Fill greased or paper lined muffin cups 2/3 full.
- Bake at 350 for 20 - 25 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from pans to wire racks.
