Buttermilk Oat Pancakes

Ingredients

  • 1 cup old-fashioned oats
  • 1 1/4 cup buttermilk
  • 1 tablespoon sugar
  • 2 Eggs
  • 1 tablespoon vegetable oil
  • 1/4 cup ground flaxseed or wheat germ
  • 1/8 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp sea salt
  • 1 tsp vanilla

Instructions

  1. Combine oats and buttermilk and stir to ensure oats are coated.
  2. Put in the fridge overnight covered.
  3. In the morning, add remaining ingredients and mix well.
  4. I usually use a hand mixer for a few seconds to get everything well-blended but have also blended by hand.
  5. Cook over a fairly low heat on a pre-heated, greased griddle or cast iron pan.
  6. They take longer to cook than regular pancakes so you want to make sure they cook slowly over med-low heat. The key is not to cook too hot, just let them brown slowly over the low heat.
  7. I use a cast-iron pan and it works very well. Serve warm with maple syrup, jam, or a fruit compote.
