Breakfast Muffin Quiche

Ingredients

  • 6 Eggs
  • 1 tablespoon Milk
  • 1 cup Spinach or Kale
  • 1 cup Cheese, any but Cheddar & Feta fare well
  • 1/2 cup Red onion
  • 1 teaspoon Pepper
  • 1/2 teaspoon Salt
  • 1 cup Ham, Turkey Sauage or Bacon Chopped or crumbled

Instructions

  1. Preheat oven to 350. Whisk eggs and milk, Add all other ingredients and gently mix.
  2. Spray muffin pan with Pam and fill each a little more than half full. Cook for 20 mins and server
