Breakfast Casserole

Ingredients

  • 1 1/2 lbs hash browns, frozen
  • 1 lb bacon or 1 lb sausage
  • 3 eggs
  • 2 ounces Velveeta cheese
  • 2 ounces cheddar cheese, shredded
  • 1 can cream of potato soup
  • salt and pepper

Instructions

  1. Cook the hash browns with the onion till crisp.
  2. Fry the meat.
  3. Mix in a 13 X 9 pan.
  4. Add the cheeses, soup, beaten eggs, salt and pepper.
  5. Bake at 350 for 30 to 50 minutes.
