Breakfast Casserole (S)
Ingredients
- 1 lb. Sausage
- 12 + 1 eggs lightly beaten
- 1 cup of THM Baking Blend
- 1 tsp Baking Powder
- 1/3-1/2 c milk
- 1/2 spTHM Sweet Blend
- 1 tsp of Celtic Sea Salt
- 1 tsp of black pepper (I use a lot more because I love p
- 2 tsps. of Red Pepper Flakes (for a kick)
- Less than 1/4 cup of water
- 1 c cheese
- 4 tsp. of melted butter
Instructions
- Mix baking blend, milk, sweetener, baking soda, and one egg together and set to the side. (You can add about a ½ tsp of salt and pepper to this mix if you want to add some spice and flavor to the topping)
- Cook sausage and rinse, drain, crumble, and cool. Sprinkle in a lightly greased 9x13 baking dish.
- Mix one dozen eggs with the remaining spices and water and pour over the sausage.
- Sprinkle cheese over egg mixture
- Pour baking blend mixture of the top and spread as much as you can.
- Pour melted butter on top-
- Bake at 350 for about 30-45 minutes, or until lightly browned.
