Basic Breakfast Casserole
Ingredients
- 10 eggs
- 1-2 tsp Spike Seasoning
- 1-2 Tbsp green onions, sliced
- 1 cup meat of choice, precooked
- 1 cup lowfat cheese, grated
- 4 ounce cottage cheese, rinsed
- 8 ounces vegetables, chopped, sauteed
Instructions
- Preheat oven to 375.
- Spray 7x11 or 8x8 glass or non-stick metal casserole dish with nonstick spray.
- Dice meat.
- Grate cheese.
- Saute vegetables in small amount of olive oil for 3-5 minutes. Or boil and drain harder vegetables such as broccoli.
- Mix eggs, spike seasoning, salt and pepper, and cottage cheese.
- Layer meat
- veggies
- green onions
- cheese
- Pour eggs over and stir gently with a fork to distribute ingredients evenly.
- Bake until eggs are firmly set and top is lightly browned. 20-25 minutes for 7X11 or 8x8 pan.
- Can make ahead and keep in fridge. Reheats well.
