Breakfast egg muffins

Ingredients

  • 6 cup liquid egg whites or egg beaters
  • 1 lb of ground turkey or (turkey bacon option)
  • 2 cups chopped spinach
  • 2 green bell peppers
  • 2 red bell peppers
  • 2 teaspoons onion powder
  • Salt and pepper
  • ( you can swap and add other veggies)

Instructions

  1. Preheat oven to 375
  2. Spray 24 muffin cups with cooking spray
  3. Add egg whites to bowl
  4. Stir in ground turkey, spinach, peppers, garlic, onion powder, cayenne pepper, salt and pepper
  5. Ladle the egg mixture into prepared muffin cups to about 3/4 full
  6. Bake until firm in the middle about 25-30 minutes
  7. Stir in air tight container and wrap in paper towel and cook in microwave for 30 seconds
