Buttermilk Pancakes With Oatmeal Recipe

Ingredients

  • 2 cups quick oats, uncooked
  • 1 tsp cinnamon
  • 1/2 teaspoon baking soda
  • 2 1/2 cups buttermilk
  • 1 cup sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons splenda
  • 1/4 oil
  • 2 eggs, beaten

Instructions

  1. Mix oats, soda, cinnamon and buttermilk. Let stand 5 minutes.
  2. Sift together flour, baking powder, salt and sugar.
  3. Add sifted dry ingredients, oil and eggs to oats mixture.
  4. Stir until combined.
  5. For each pancake, pour about 1/4 cup batter onto hot, lightly greased griddle.
  6. Bake to a golden brown, turning only once.
  7. Serve hot with butter and syrup.
