Egg Cheese & Spinach Breakfast Bake

Ingredients

  • 4 cups fresh spinach
  • 1 cup liquid egg substitute
  • 2 wedges Laughing Cow light swiss cheese
  • 2 slices fat free american cheese
  • 2 slices turkey bacon
  • Salt & pepper

Instructions

  1. Cook bacon and allow to cool.
  2. Preheat oven to 375(F) degrees.
  3. Spray a pan with nonstick cooking spray and cook spinach until wilted.
  4. Chop bacon into small pieces and cut cheese wedges into quarters.
  5. Spray a baking dish with nonstick cooking spray.
  6. Line the bottom with spinach and top with bacon and cheese wedges.
  7. Pour in egg substitute, then layer American cheese on top.
  8. Bake for 20-25 minutes until firm.
  9. Season with salt & pepper and serve warm.
